Vi vet at de er usunne, men s\u00e5 snart vi blir hekta, klarer vi ikke \u00e5 stoppe. En fersk studie oppdaget en sammenheng mellom matvalgene v\u00e5re, hjernens ledninger og trangen v\u00e5r. La oss ta en n\u00e6rmere titt.<\/strong><!--more--><\/p>\n<h1>Hvorfor liker vi s\u00f8ppelmat s\u00e5 mye?<\/h1>\n<p>Vi vet at et kosthold rikt p\u00e5 fett og sukker fremmer overfl\u00f8dig kaloriinntak og vekt\u00f8kning. Det er ogs\u00e5 mye forskning som viser at overvektige mennesker har endret dopaminfunksjon. Dette betyr at hjernen deres gir dem en mye st\u00f8rre bel\u00f8nning for \u00e5 spise s\u00f8ppelmat. Problemet er at vi egentlig ikke vet hva som for\u00e5rsaker at dopaminfunksjonen endres p\u00e5 denne m\u00e5ten. Det er tre hovedhypoteser:<\/p>\n<ul>\n<li>Noen mennesker er f\u00f8dt med endret dopaminfunksjon som \u00f8ker deres mottakelighet for vekt\u00f8kning<\/li>\n<li>Dopaminfunksjonen er endret som f\u00f8lge av overvekt<\/li>\n<li>Dopaminfunksjonen endres direkte ved gjentatt eksponering for s\u00f8ppelmat<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Forskere ved Max Planck Institute for Metabolism Research i K\u00f6ln har i samarbeid med Yale University satt opp et eksperiment for \u00e5 teste det tredje alternativet. De tror at matvarer med h\u00f8yt fett- og sukkerinnhold kan endre hjernen v\u00e5r.<\/p>\n<p>\u00abTendensen v\u00e5r til \u00e5 spise mat med mye fett og h\u00f8yt sukker, det s\u00e5kalte vestlige kostholdet, kan v\u00e6re medf\u00f8dt eller utvikle seg som et resultat av overvekt. Men vi tror at hjernen l\u00e6rer denne preferansen, sa hovedforfatteren av studien, Sharmili Edwin Thanarajah.<\/p>\n<p>For \u00e5 teste hypotesen deres ga forskerne en gruppe frivillige en pudding som inneholdt mye fett og sukker hver dag i \u00e5tte uker i tillegg til deres normale kosthold. Hjernens respons p\u00e5 mat med mye fett og h\u00f8yt sukker ble kraftig \u00f8kt i gruppen som spiste pudding med h\u00f8yt sukker og h\u00f8yt fettinnhold. Det aktiverte deres dopaminerge system, regionen i hjernen som er ansvarlig for motivasjon og bel\u00f8nning.<\/p>\n<p>&laquo;V\u00e5re m\u00e5linger av hjerneaktivitet viste at hjernen omkobler seg selv gjennom inntak av fet s\u00f8ppelmat. Den l\u00e6rer seg ubevisst \u00e5 foretrekke givende mat. Gjennom disse endringene i hjernen vil vi ubevisst alltid foretrekke maten som inneholder mye fett og sukker, sa medforfatter av studien, Marc Tittgemeyer.<\/p>\n<h1>Hjernen v\u00e5r husker junk food<\/h1>\n<p>I l\u00f8pet av studieperioden gikk ikke deltakerne som spiste puddingen med h\u00f8yt fett opp mer i vekt enn personer i den andre gruppen, og blodsukkeret og kolesterolet endret seg heller ikke. Forskerne antar at preferansen for fet s\u00f8ppelmat vil fortsette etter endt studie.<\/p>\n<p>&laquo;Nye forbindelser blir laget i hjernen, og de l\u00f8ses ikke opp s\u00e5 raskt.
