But we\u2019ve compiled three recipes for comfort food that you can whip up easily and quickly post-cycle; whether it\u2019s after a cycling commute, a tough training session or a weekend granfondo, we\u2019ve got you covered&#8230;<\/p>\n<p><strong>RECIPES:<\/strong><\/p>\n<p><span style=\"color: #008000; font-size: 14pt;\"><strong>Sweet potato fajitas<\/strong><\/span><\/p>\n<p><em>Serves 4<\/em><\/p>\n<p><em>\u00a0<a href=\"https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Sweet-Potato-Fajitas.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1176\" src=\"https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Sweet-Potato-Fajitas.png\" alt=\"\" width=\"768\" height=\"512\" srcset=\"https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Sweet-Potato-Fajitas.png 768w, https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Sweet-Potato-Fajitas-300x200.png 300w, https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Sweet-Potato-Fajitas-272x182.png 272w\" sizes=\"auto, (max-width: 768px) 100vw, 768px\" \/><\/a><\/em><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>2 tbsp olive oil<\/p>\n<p>2 garlic cloves, crushed<\/p>\n<p>2 tbsp fajita spice<\/p>\n<p>Salt and black pepper<\/p>\n<p>1 large sweet potato, peeled and cut into chips<\/p>\n<p>2 peppers, mixed colours, deseeded and sliced<\/p>\n<p>1 onion, sliced<\/p>\n<p>250g plain Greek yoghurt<\/p>\n<p>Zest and juice of 1 lime<\/p>\n<p>8 small flour or corn tortillas, warmed<\/p>\n<p>1 ripe avocado, sliced<\/p>\n<p>Salsa<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>1\u00a0\u00a0\u00a0\u00a0 Preheat the oven to 240\u02daC\/220\u02daC fan\/gas mark 7.<\/p>\n<p>2\u00a0\u00a0\u00a0\u00a0 In a bowl, stir together the oil, garlic, fajita spice and some salt and black pepper.<\/p>\n<p>3\u00a0\u00a0\u00a0\u00a0 Place the sweet potato chips on a large baking tray and drizzle with two teaspoons of the spiced oil. Toss to coat, then roast for 15 minutes.<\/p>\n<p>4\u00a0\u00a0\u00a0\u00a0 Add the peppers and onion to the bowl with the remaining spiced oil and toss to coat.<\/p>\n<p>5\u00a0\u00a0\u00a0\u00a0\u00a0 Carefully remove the baking tray from the oven and flip over the sweet potato pieces. Push them to one half of the tray and add the peppers and onion to the other side, spreading them out into an even layer. Return to the oven for 12-15 minutes or until the sweet potatoes are tender.<\/p>\n<p>6\u00a0\u00a0\u00a0\u00a0\u00a0 Meanwhile, in a small bowl, combine the Greek yoghurt, lime zest and the juice of half of the lime. Season with salt and black pepper and stir to combine well.<\/p>\n<p>7\u00a0\u00a0\u00a0\u00a0\u00a0 Squeeze the remaining lime juice over the cooked vegetables, then transfer to a serving bowl. Serve with the lime crema, the warmed tortillas, the sliced avocado and some salsa.<\/p>\n<p><em>Per Serving: 618kcals, 30.7g fat (10g saturated), 74.9g carbs (9.8g sugars), 13.3g protein, 8.9g fibre, 1.533g sodium.<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #008000; font-size: 14pt;\"><strong>Indian spiced frittata<\/strong><\/span><\/p>\n<p><em>Serves 4<\/em><\/p>\n<p><em>\u00a0<a href=\"https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Indian-Spiced-Frittata.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1177\" src=\"https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Indian-Spiced-Frittata.png\" alt=\"\" width=\"768\" height=\"512\" srcset=\"https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Indian-Spiced-Frittata.png 768w, https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Indian-Spiced-Frittata-300x200.png 300w, https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Indian-Spiced-Frittata-272x182.png 272w\" sizes=\"auto, (max-width: 768px) 100vw, 768px\" \/><\/a><\/em><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1 tbsp rapeseed oil<\/p>\n<p>2 large onions, thinly sliced<\/p>\n<p>1 tbsp Madras curry paste<\/p>\n<p>500g cherry tomatoes, halved<\/p>\n<p>1 green chilli, deseeded and finely chopped<\/p>\n<p>Handful of fresh coriander, roughly chopped<\/p>\n<p>8 large eggs<\/p>\n<p>&nbsp;<\/p>\n<p><em>To serve:<\/em><\/p>\n<p>Chips<\/p>\n<p>Mixed leaves<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>1\u00a0\u00a0\u00a0\u00a0 Heat the oil in an ovenproof pan over a medium heat and cook the sliced onions for 8-10 minutes until soft and golden.<\/p>\n<p>2\u00a0\u00a0\u00a0 Add the curry paste and cook for one minute longer, then add the tomatoes and chilli. Cook until the mixture is thick and the tomatoes have all burst.<\/p>\n<p>3\u00a0\u00a0\u00a0 Turn the grill on to high heat. Beat the eggs in a large jug and add most of the coriander. Season with salt and black pepper.<\/p>\n<p>4\u00a0\u00a0\u00a0 Pour the eggs over the spicy onions, tilting the pan so that they flow evenly over the top. Cook over a low heat for 8-10 minutes until almost set. Transfer to the grill and cook for another 3-4 minutes until set.<\/p>\n<p>5\u00a0\u00a0\u00a0 Serve with chips and mixed leaves.<\/p>\n<p><em>Per Serving: 256kcals, 15.8g fat (3.4g saturated), 14.3g carbs (7.6g sugars), 14.9g protein, 3.6g fibre, 0.154g sodium.<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #008000; font-size: 14pt;\"><strong>Curried chicken pie<\/strong><\/span><\/p>\n<p><em>Serves 4<\/em><\/p>\n<p><em>\u00a0<a href=\"https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Curried-Chicken-Pie.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1178\" src=\"https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Curried-Chicken-Pie.png\" alt=\"\" width=\"768\" height=\"512\" srcset=\"https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Curried-Chicken-Pie.png 768w, https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Curried-Chicken-Pie-300x200.png 300w, https:\/\/d2p6e6u75xmxt8.cloudfront.net\/14\/2019\/12\/Curried-Chicken-Pie-272x182.png 272w\" sizes=\"auto, (max-width: 768px) 100vw, 768px\" \/><\/a><\/em><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1 tbsp olive oil, plus extra for brushing<\/p>\n<p>1 onion, sliced<\/p>\n<p>3 garlic cloves, crushed<\/p>\n<p>1 x 3cm piece of fresh ginger, peeled and grated<\/p>\n<p>1 tbsp curry powder<\/p>\n<p>2 tsp soy sauce<\/p>\n<p>1 x 400ml reduced-fat coconut milk<\/p>\n<p>250ml chicken stock<\/p>\n<p>1 heaped tsp cornflour, mixed with 1 tbsp water<\/p>\n<p>1 large head of broccoli, chopped into florets<\/p>\n<p>500g rotisserie chicken, shredded<\/p>\n<p>4 large handfuls of kale<\/p>\n<p>4 sheets filo pastry<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>1\u00a0\u00a0\u00a0\u00a0 Preheat the oven to 220\u02daC\/200\u02daC fan\/gas mark 7.<\/p>\n<p>2\u00a0\u00a0\u00a0\u00a0 Heat the oil in an ovenproof casserole dish over a medium heat and cook the onion over a medium heat for 2-3 minutes. Season with salt and black pepper. Stir in the garlic, ginger and curry powder and cook for one minute longer.<\/p>\n<p>3\u00a0 \u00a0 Stir in the soy sauce, coconut milk, chicken stock and cornflour slurry. Add the broccoli and chicken to the pan. Bring to the boil, then stir in the kale and allow to wilt. Season to taste, then remove from the heat.<\/p>\n<p>4\u00a0 \u00a0 Brush each sheet of pastry lightly with olive oil, then scrunch them up and place on top of the pie filling. Bake for 20 minutes or until the pastry is a deep golden brown and the filling is piping hot throughout.
